Achari Bhindi, Bihari Keema, Chicken & Masoor Ki Daal Ka Daalcha And Aloo Ki Chaat by Zubaida Tariq

Ingredients for Aloo Ki Chaat:

  • Kurkuray  1 packet
  • Boiled potatoes  1/2 kg
  • Salt  to taste
  • Red chili flakes  1 tbsp
  • Corn flour 2 tbsp
  • Chopped onion 100 gm
  • Green chilies  100 gm
  • Yogurt 250 gm
  • Sugar as required

Method:

  1. First boil potatoes, mash them, add salt, chopped red chili, cornflour and chopped onion and make kababs of it.
  2. Now shallow fry them.
  3. Pour beat yogurt and sugar in bowl.
  4. Spread kababs on a serving dish.
  5. Now put kurkuray on top and serve.

Ingredients for Bihari Keema:

  • Beef mince  1/2 kg
  • Yogurt  1 cup
  • Big cardamom  2
  • Lemons  2
  • Chopped onion  2
  • Whole red chilies  3
  • Green chilies  4
  • Small cardamom  6
  • Mint leaves 1/2 bunch
  • Coriander seeds 1 tsp
  • White cumin 1 tsp
  • Chickpeas  1 tbsp
  • Ginger Garlic paste  1 tbsp
  • Bihari masala  1 tbsp
  • Oil  2 tbsp
  • Salt  to taste

Method:

  1. First add red chili, whole coriander, white cumin, small cardamom, peas and long cardamom and chop it nicely.
  2. Pour oil add chopped onions make it golden brown in a pan and take out.
  3. Then add mince, salt, ginger garlic paste, chopped masala, bihari masala, yogurt, lemon juice, bihari masala and green chilies in a bowl.
  4. When the water dries then roast it and take out in dish.
  5. In end, garnish with fried onions and mint and serve hot.

Ingredients for Chicken & Masoor Ki Daal Ka Daalcha:

  • Chicken  1
  • Yellow lentil  1 cup
  • Red chili powder  1 tbsp
  • Turmeric  1 tsp
  • Ginger garlic paste  1 tbsp
  • Salt  to taste
  • Tomatoes  3
  • Chopped onion  2
  • Green chilies  4
  • Cinnamon  1 tsp
  • Curry leaves  few
  • Oil  1 cup

Method:

  1. Put chicken pieces, chopped onion, water, ginger garlic paste, turmeric, chopped red chili, oil and leave it to cook.
  2. Now boil the yellow lentils and boil it.
  3. When the yellow lentils tender, chop it in blender.
  4. Dry the chicken water and add tomato slice and add curry leaves to simmer.
  5. After 5 minutes add chopped and roasted cinnamon, simmer it for 5 minutes.
  6. After that serve the hot chicken and masoor ki daal ka dalcha with rice.

Ingredients for Achari Bhindi:

  • Lady fingers  1/2 kg
  • Yogurt  1 cup
  • Mustard oil  1 cup
  • Green chilies  6
  • Curry leaves  few
  • Fenugreek seeds few
  • Tamarind paste  1/2 cup
  • Turmeric powder  1 tsp
  • White cumin  1 tsp
  • Aniseed  1 tsp
  • Onion seed  1 tsp
  • Mustard seed  1 tsp
  • Red chili crushed  1 tbsp
  • Whole coriander 1/2 tbsp
  • Salt  to taste

Method:

  1. Wash lady fingers, dry it and mark cut from center.
  2. Now pour oil in pan, heat it, add fenugreek seeds and then it by adding lady finger.
  3. When color of lady finger turns to brown, add turmeric, aniseed, white cumin, chopped red chili, green chilies, fennel seeds, tamarind paste, roast it well, add curry leaves and yogurt and leave for simmer.
  4. In end, add salt and serve with chapati.
