Ingredients for Gulzar Special Katakat Masala:
- Mutton heart 250 gm
- Mutton liver 250 gm
- Mutton kidney 250 gm
- Mutton brain 1
- Yogurt 2 cup
- Ginger garlic paste 2 tbsp
- Ginger water 2 tbsp
- Red chili crushed 2 tbsp
- Crushed black pepper 1 tsp
- Roasted & chopped coriander 1 tbsp
- Roasted & chopped cumin 1 tbsp
- Turmeric powder 1 tsp
- Kasoori methi 1 tsp
- Green coriander 1/2 bunch
- Green chilies 5-6
- Clarified butter 1/2 cup
- Salt to taste
Method:
- Cut liver, heart and kidney into small pieces.
- Now keep in ginger water and leave for 10 to 15 minutes.
- Then wash it and keep it aside.
- Now put water and turmeric in one pot, boil it, put brain and boil again for 4 to 5 minutes.
- Then strain it and keep it aside.
- Now put liver, kidney and heart pieces on tawa, together add ginger garlic paste and yogurt, cover it and cook it.
- When liver, kidney and heart are tendered, add crushed red chili, crushed black pepper, roasted & chopped coriander, roasted & chopped cumin, turmeric powder, kasoori methi, salt, ghee and green chillies and roast it.
- When it becomes ready, cut brain into small pieces, add in it and cook for 2 to 3 minutes.
- In end, dish out, put kasoori methi and green coriander, mix well and serve.
Ingredients for Sheermal:
- White flour 1/2 kg
- Egg 1
- Yeast 1 sachet
- Clarified butter 1/2 cup
- Sugar 4 tbsp
- Salt to taste
Method:
- First, put yeast and sugar in lukewarm water, mix it well and leave for 10 to 15 minutes.
- When yeast rises, put in mixing bowl.
- Then add flour, beaten egg, ghee and salt, mix well and knead it.
- Now fold in plastic and leave it hot place.
- Then take out, make portions and roll it.
- Now make holes with forks.
- After that, bake in preheated oven at 200 degrees C for 15 to 18 minutes.
- Brush with ghee in center.
- Sheermal is ready.
