Ingredients for Lucknowi Chicken Korma:

  • Chicken 1 kg
  • Ginger garlic paste 2 tbsp
  • Oil 1/2 cup
  • Yogurt 1 cup
  • Nutmeg 1/4 tsp
  • Mace 1/4 tsp
  • Green cardamom 1/2 tsp
  • Onion brown 4 tbsp
  • Coriander powder 2 tsp
  • Chilli powder 2 tsp
  • Salt 1-1/2 tsp
  • Whole spices mixed 1 tbsp
  • Saffron 1/4 tsp
  • Kewra water 1 tsp
  • Almonds blanched 10-12

Ingredients for Purbi Pasanda:

  • Mutton pasanda 1/2 kg
  • Ginger garlic paste 1 tbsp
  • Yogurt 1 cup
  • Nutmeg grinded 1/4 tsp
  • Mace grinded 1/4 tsp
  • Green cardamom 1/2 tsp
  • Raw papaya 1 tbsp
  • Onion brown 3 tbsp
  • Coriander powder 2 tsp
  • Chilli powder 2-1/2 tsp
  • Salt 1 tsp
  • All spice 1/2 tsp
  • Saffron 1/4 tsp
  • Kewra water 1 tsp

Ingredients for Raj Shahi Koftay:

  • Mince 1/2 kg
  • Egg 1
  • All spice 1 tsp
  • Poppy seeds 1 tsp
  • Salt 1 tsp
  • Onion 1
  • Desiccated coconut 1 tsp
  • Roasted gram 2 tbsp
  • Mace 1/4 tsp
  • Nutmeg 1/4 tsp
  • Brown onion 1 tbsp
  • Chilli powder 1 tsp
  • Yogurt 2 tbsp
  • Bread 1

For Gravy:

  • Onion brown 4 tbsp
  • Oil 1/2 cup
  • Coriander powder 2 tsp
  • Chilli powder 2 tsp
  • Salt 1 tsp
  • Yogurt 1 cup
  • Ginger garlic 1 tbsp
  • All spice 1/2 tbsp
  • Kewra water 1 tbsp
