Ingredients For Katakat Chanp Masala:

  • Mutton chops  1 kg
  • Mutton heart  125 gm
  • Mutton liver  125 gm
  • Mutton kidney  125 gm
  • Mutton brain  1
  • Yogurt  2 cup
  • Ginger garlic paste  2 tbsp
  • Ginger paste  2 tbsp
  • Red chili crushed  2 tbsp
  • Black pepper  1 tsp
  • Crushed coriander 1 tbsp
  • Crushed cumin  1 tbsp
  • Turmeric powder  1 tsp
  • Kasoori fenugreek   1 tsp
  • Green coriander 1/2 bunch
  • Green chilies  5 to 6
  • Clarified butter  1/2 cup
  • Salt  to taste

Method:

  1. First add small pieces of mutton kidney, mutton heart, mutton liver.
  2. Now add ginger water, leave it for 10 to 15 minute.
  3. Then wash it and keep it on a side.
  4. Now pour water, add chopped turmeric then boil it and add mutton brain boil it for 4 to 5 minutes.
  5. Then filter it and keep it on a side, then put kidney, chops, liver and heart pieces, along ginger garlic paste, yogurt, cover it and leave it for a while.
  6. Then put heart, kidney, liver, chops tender them and add chopped red chilies, chopped black pepper, chopped and crushed coriander, chopped and roasted cumin, chopped turmeric, ghee and green chilies then roast.
  7. When all the ingredients becomes ready then add brain piece, cook it for 2 to 3 minutes.
  8. In the end take out the dish and add fenugreek, green coriander mix it well then dish out and serve.

Ingredients For Batair Pulao:

  • Mint  1/2 bunch
  • Yogurt  1/2 cup
  • Food color  1 pinch
  • Oil  for fry
  • Rice  1/2 kg
  • Yogurt  250 gm
  • Onion  2
  • Green chilies  2 to 3
  • Ginger garlic paste  2 tbsp
  • Bay leaves  2 to 3
  • Cloves  4 to 5
  • Big cardamom  3 to 4
  • Cinnamon  2 to 3
  • Whole cumin  1 tsp
  • Black pepper  1 tsp
  • Clarified butter  1/2 cup
  • Salt  to taste

Method:

  1. Wash the batair, add yogurt, keep it on a side.
  2. Then wash it.
  3. Now add green coriander, chopped mint, green chili paste.
  4. Then take a green paste, chopped red chili, chopped black pepper, coriander powder, ginger garlic paste, flour, pinch of yellow color, mix it well marinate the batair for half an hour.

For Pulao:

  1. Take a ghee, onion in a bowl make it bronw and keep it on a side.
  2. Now add ghee, curry leaves, big cardamoms, cinnamon, cloves, whole cumin make it crispy.
  3. Then add marinated batair add ginger garlic paste roast it well.
  4. Now pour water cook it well so that the batair tenders.
  5. When the batair tenders then add stock and add all whole masala.
  6. Now pour ghee in a pan, heat it add chopped onions make them golden brown.
  7. Now add green chilies, yogurt, chopped black pepper, whole black pepper, salt, roast it well.
  8. Then add stock, boil the stock then add rice and mix the batair.
  9. Simmer the rice.
  10. When they are simmered then dish out them.
  11. Garnish it with brown onion then serve.
