Sabzi Pulao, Tandoori Chicken And Tandoori Masala by Chef Gulzar

Ingredients For Tandoori Chicken:

  • Whole chicken  1
  • Ginger garlic paste  2 tbsp
  • Tandoori masala as required
  • Salad leaves 3 to 4
  • Tomatoes  1 to 2
  • Onion  1 to 2
  • Salt to taste

Method:

  1. First add tandoori masala, ginger garlic paste mix it well add whole chicken.
  2. Now first steam chicken and then bake in oven on 200 degree C.
  3. Take it out, garnish with salad leaves, tomatoes and onions and serve.

Ingredients For Sabzi Pulao:

  • Mix Vegetable 1/2 kg
  • Rice  1/2 kg
  • Ginger garlic paste 2 tbsp 
  • Cinnamon 1 to 2 sticks
  • Clove 2 to 3
  • Onion 1
  • Black pepper 1/2 tsp
  • Chicken cube 2 
  • Mint 1 bunch
  • Green chilies 4 to 5
  • Clarified butter 4 to 5 tbsp
  • Salt to taste

Method:

  1. First wash the rice, and soak for 2 hours.
  2. Now pour oil in pan, add cinnamon, cloves make it crispy.
  3. Now add onions fry them, add ginger garlic paste then roast it.
  4. Now add mix vegetable, chopped black pepper, salt mix it well.
  5. Then add rice, chicken cubes, water and cook it well so that rice becomes ready.
  6. Then simmer it. When it is simmered then add mint, green chilies for garnish then serve.

Ingredients For Tandoori Masala:

  • Red chili paste 4 tbsp
  • Turmeric paste 1 tsp
  • All spice powder 1 tsp
  • Cumin powder  1 tsp
  • Nutmeg mace powder 1/2 tsp
  • White flour  2 tbsp
  • Lemon juice  4 tbsp
  • Food color  1 pinch

Method:

  1. First add red chili paste, turmeric, chopped garam masala, chopped cumin, chopped nut meg mace, flour, lemon juice, pinch of yellow color in a mixing bowl mix it well.
  2. Tandoori masala is ready.
