Rajasthani Kadhi, Lacha Kabab And Hyderabadi Chutney by Chef Gulzar

Ingredients For  Rajhistani Kadhi:

For Pakora:

  • Gram flour  1 cup
  • Green chilies 2 to 3
  • Red chili powder 1/4 tsp
  • Crushed carom  1/4 tsp
  • Turmeric powder  1/4 tsp
  • Coriander powder 1/4 tsp
  • Baking powder  1/3 tsp
  • Oil  for fry
  • Salt to taste

For Kadhi:

  • Sour yogurt  2 cup
  • Gram flour 2 tbsp
  • Cumin  1/2 tsp
  • Turmeric powder  1/2 tsp
  • Red chili powder  1/2 tsp
  • Ginger chopped  1 inch
  • Green chilies  2 to 3
  • Curry leaves  10 to 12
  • Oil  2 to 3 tbsp
  • Salt to taste

For serving:

  • Boiled rice  1 cup

Method:

  1. For making pakora: Take gram flour, green chilies, red chilli powder, crushed carom, turmeric powder, coriander powder, baking powder, salt, water, mix it well, batter is ready.
  2. Now pour oil heat it well, add pakoras for frying.
  3. Now heat the pan, add oil heat it well fry the pakoras and keep it on a side.
  4. For making kadhi: First add yogurt, gram flour, salt, chopped turmeric, mix it well.
  5. Now pour oil in a pan, add cumin for frying.
  6. Then add green chilies, ginger, roast it well.
  7. Then add curry leaves, chopped red chilies, yogurt mixture, mix it well, until the karhi becomes ready.
  8. When the karhi becomes ready then dish out it then add pakora.
  9. Hot rajistani karhi is ready to serve with rice.

Ingredients For Lacha Kabab:

  • Boneless beef /2 kg
  • Gram lentil 150 gm
  • Garlic cloves  5 to 6
  • Ginger  150 gm
  • Big cardamom  4 to 5
  • Cinnamon  1 to 2 sticks
  • Cloves  3 to 4
  • Black pepper 1 tsp
  • Whole red chili  6 to 8
  • Cumin  1 to 2 tsp
  • Whole coriander 1 to 2 tsp
  • Egg  1-2
  • Oil  for fry
  • Salt  to taste
  • Bread slice  as required

Method:

  1. Make small chicken pieces, add chicken pieces into a pan add gram lentils, chopped cumin, chopped black pepper, chopped red chilies, garlic cloves, ginger, big cardamom, cinnamon, salt, water let it cook.
  2. Now cook it on a low temperature dry its water.Then take it out and cool it, chop them into grinder.
  3. After that add egg, bread slices make them wet.
  4. Then make its portions, fry the, in hot oil.
  5. Kabab is ready.

Ingredients For Hyderabadi Chutney:

  • Tomato  1/2 kg
  • Red chili powder  1 tsp
  • Ginger garlic paste  1 tsp
  • Turmeric powder  1/2 tsp
  • Mustard seed  1/2 tsp
  • Garlic  4 to 5 cloves
  • Whole cumin  1/2 tsp
  • Oil  2 to 3 tbsp
  • Salt  to taste

Method:

  1. First pour oil in a pan, add ginger garlic paste for frying.
  2. Then add tomatoes, roast it well.
  3. Now add turmeric, chopped red chilies, mustard seeds, whole cumin ,salt, cook it well make it thick take it out then serve.
