Nutella Coconut Bars by Zarnak Sidhwa

Ingredients:

  • Butter 1/4 pound
  • Icing sugar 2 tbsp
  • Icing sugar 2 tbsp
  • Flour 1 cup
  • Nutella 1/2 cup
  • Eggs 2
  • Light brown sugar 1-1/4 cups
  • Vanilla 1 tsp
  • Salt 1/4 tsp
  • Baking powder 1 tsp
  • Chopped almonds 1 cup
  • Shredded coconut 1-1/2 cups

Method:

  1. Preheat the oven to 180 degrees C.
  2. Butter and flour an 8x8 inch square baking dish.
  3. Beat the butter and add the icing sugar, flour and blend.
  4. Pat evenly into the prepared baking dish and bake for 15 minutes.
  5. While the pastry is baking, beat the eggs, then add the brown sugar and the vanilla, beating until thick.
  6. Mix the remaining 2 tbsp of flour, salt and baking powder together and add to the egg mixture, incorporating well.
  7. Beat in the nuts and coconut.
  8. Spread the nutella over the baked pastry.
  9. Cover with the nut and coconut mixture, spreading evenly.
  10. Bake for 25-30 minutes.
  11. Set baking dish on a wire rack and allow to cool completely.
  12. Cut into bars.
