Chicken Handi by Zarnak Sidhwa

Ingredients:

  • Boneless chicken 1/2 kg
  • Chopped onions 2
  • Oil 1/2 cup
  • Yogurt 1 cup
  • Ginger garlic paste 1 tbsp
  • All spice powder 1 tsp
  • Salt to taste
  • Crushed red chilies 1 tsp
  • Red chili powder 1 tsp
  • Lemon juice 4 tbsp
  • Green chilies 2
  • Coriander leaves a few
  • Orange color 1 pinch

Method:

  1. Blend together raw onion with 1/2 cup water.
  2. Now in a bowl add onion mixture, ginger garlic paste, all spice powder, salt, lemon juice, crushed red pepper, orange color, red chili powder and yogurt. Mix it well.
  3. Marinate chicken in this mixture for 30 minutes.
  4. Heat oil, add marinated chicken with mixture, cover and cook on low flame till chicken becomes tender and oil comes on surface.
  5. Put hot coal in pan and add few drops of oil on coal and cover the pan immediately to give the aroma to gravy.
  6. Garnish with coriander and green chilies, sere with naan.
