Chicken Burger by Zarnak Sidhwa

Ingredients:

  • Chicken mince 200 gm
  • Burger buns 4
  • Chopped onions 2 medium
  • Large onion 1
  • Green chilies 2
  • Black peppercorns 1/4 tsp
  • Red chili powder 1/2 tsp
  • Chopped ginger 1 inch
  • Soya sauce 1-1/2 tbsp
  • Red chili sauce 3-1/2 tbsp
  • Mayonnaise 5 tbsp
  • Egg 1
  • Coriander leaves 2 tbsp
  • Oil 2-3 tbsp
  • Salt to taste
  • Butter 2 tbsp
  • Iceberg lettuce few
  • Cheese slices 4

Method:

  1. Place chicken mince in a bowl, add chopped onions, green chilies, crushed black peppercorns, garam masala powder, red chili powder, ginger, 1-1/2 tbsp soya sauce, salt, 1-1/2 tbsp red chili sauce, 1 tbsp mayonnaise and mix well.
  2. Add eggs and coriander leaves and mix well.
  3. Refrigerate for 10 minutes. Heat oil.
  4. Divide chicken patty mixture into equal portions and shape each portion into a round patty.
  5. Place the patties in the pan and shallow fry, turning sides, till evenly golden on  both the sides.
  6. Place onion rings in the pan and saute.
  7. Add 1 tsp soya sauce and remaining red chili sauce to the onion rings and saute for 1-2 minutes or till the onion rings become light golden.
  8. Slice the buns horizontally into halves.
  9. Apply butter and place in the same pan.
  10. Toast till light golden.
  11. Place a few shredded lettuce leaves on the base half of each bun and place a chicken patty on it.
  12. Arrange sauted onions on the patty.
  13. top it with a cheese slice and 1 tbsp mayonnaise.
  14. Cover with the other half bun.
  15. Serve immediately.
