Baigan Sabzi by Shireen Anwer

Ingredients:

  • Baigan 1/2 kg
  • Tomatoes 4 sliced
  • Onion seeds 1 tsp
  • Fennel seeds 1 tsp
  • Chili powder 1 tsp
  • Coriander powder 2 tsp
  • Turmeric 1/2 tsp
  • Crushed cumin 1-1/2 tsp
  • Oil 1/2 cup
  • Salt 1 tsp

Method:

  1. Heat oil and put onion seeds and fennel seeds.
  2. When brown, put chili powder, coriander powder, turmeric, crushed cumin, salt and tomato sliced, cover it and cook until soft.
  3. Then add round baigan slices and keep on simmer for 10 minutes.
