Ingredients:

  • Almonds 1 cup
  • Icing sugar 1-2/3 cup
  • Flour 1/2 cup
  • Egg whites 3/4 cup
  • Unsalted butter 3/4 cup
  • Orange peel 3 tbsp
  • Butter 1 tbsp
  • Tart molds 18 or
  • Muffin tins 18 or
  • Silicone tart molds 18

Method:

  1. Toast almonds in oven at 230 degrees C for 5 minutes.
  2. Let it cool and ground to make fine powder.
  3. Combine sugar, ground almonds and flour and then sift or force the mixture through a fine sieve into second bowl.
  4. The mixture should be very fine.
  5. Stir in unbeaten egg whites until thoroughly blended and then stir in 3/4 cup of melted butter until well blended.
  6. Add in chopped orange peel.
  7. Butter tart molds or muffin tins.
  8. Fill each mold with batter just to rim of mold.
  9. Place molds on baking sheet and place in center of preheated oven.
  10. Bake for 7 minutes at 230 degrees C, then reduce oven temperature to 200 degrees C and bake another for 7 minutes.
  11. Turn off heat and let financiers rest in oven another 7 minutes.
  12. Remove financiers from oven and un-mold them as soon as they have cooled.
