Caribbean Chicken by Zarnak Sidhwa

Ingredients:

  • Boneless chicken breast 4
  • Oil 1 tsp
  • Chopped onions 1-1/2
  • Red capsicum 1
  • Green capsicum 1
  • Roasted garlic 1 tbsp
  • Coconut milk 1 cup
  • Salt to taste
  • Pepper to taste
  • Red chili 1 tsp

Method:

  1. Fry chicken breast in oil until chicken just begins to brown.
  2. Stir onions, green and red capsicum into pan with chicken.
  3. Saute until onions are translucent.
  4. When vegetables are translucent, stir in garlic and coconut milk.
  5. Let mixture cook 5-8 minutes, before removing skillet from heat.
  6. Season it with salt, pepper and red chili flakes.
  7. Transfer the mixture to 9x13 inch baking dish and bake in 220 degrees C oven for 45 minutes or until vegetables cook down and chicken is tender.
