Thandai by Zarnak Sidhwa

Ingredients:

  • Milk 1 liter
  • Caster sugar 1/2 cup
  • Saffron a few strands
  • Pistachios (thinly slivered) to garnish 2

To be ground into a fine powder:

  • Almonds 1/4 cup
  • Poppy seeds 2 tbsp
  • Fennel seeds 2 tbsp
  • Cardamom powder 1/2 tsp
  • White peppercorns 20
  • Rose water or kewra water 2 tsp

Method:

  1. Boil milk.
  2. Add sugar to milk and ensure that it is well blended.
  3. Allow milk to cool completely. Keep aside.
  4. Add ground powder in milk and mix well.
  5. Refrigerate mixture for 3 to 4 hours.
  6. Strain mixture through a very fine sieve, add few strands of saffron and mix well.
  7. Refrigerate n serve chilled.
