Tikka Biryani by Zubaida Tariq

Ingredients:

  • Chicken 1
  • Tikka masala 1 packet
  • Mint leaves 1 bunch
  • Yogurt 1 cup
  • Fresh milk 1 cup
  • Ghee or Oil 1 cup
  • Cardamoms 4
  • Black pepper 4
  • Finely chopped onion 4
  • Green chilies 6
  • Lemons 6
  • Yellow food color few drops
  • Sela rice 2-1/2 cups
  • Ginger garlic paste 1 tbsp
  • Roasted & crushed cumin 1 tbsp
  • White vinegar 1 tbsp
  • Salt to taste

Method:

  1. Wash chicken nicely, mix ginger garlic paste, yogurt, mint leaves, green chilies, cardamoms, black pepper and 3 lemon juice.
  2. Now add tikka masala and boil chicken.
  3. When water dries, remove chicken and roast on grill pan.
  4. Then put lot of water, cardamom, mint leaves, green chilies, white vinegar and salt in rice and boil 2/4th.
  5. Then fry finely chopped onion in oil or ghee and make bhagar.
  6. When onion is golden brown, take out, spread on paper and put chicken in hot oil or ghee.
  7. Now grease rice pot on base, make layer of half rice and make layer of tikka.
  8. Then crush half onion with hands and put in pot.
  9. Also put some mint leaves and roasted & crushed cumin and make layer of rice on top.
  10. Then mix yellow food color in some hot milk and put on rice.
  11. Now put remaining onion, mint leaves, 3 lemon juice and cumin on top and keep on simmer.
  12. In end, serve tikka biryani with yogurt raita.
