Mughlai Biryani by Chef Gulzar

Ingredients:

  • Sela rice 500 gm
  • Mutton 700 gm
  • Yogurt 250 gm
  • Onion 1
  • Red chili powder 2 tbsp
  • All spice powder 1 tsp
  • Turmeric powder 1 tsp
  • Cinnamon 4
  • Cloves 4-6
  • Green cardamom 5
  • Cumin seeds 2 tsp
  • Black cumin 1/2 tsp
  • Garlic paste 2 tbsp
  • Fresh coriander 1/2 bunch
  • Mint 1/2 bunch
  • Green chilies 10-12
  • Eggs boiled 6
  • Orange food color as required
  • Dried fruits as required
  • Ghee or Oil 1 cup
  • Salt to taste

Method:

  1. For rice: Wash rice, strain it and soak for 2 hours.
  2. Now put water, black cumin and salt and boil it.
  3. When fragrance comes, add rice and boil 1/4.
  4. Now strain it and keep it aside.
  5. For korma: Heat oil in pan, add cinnamon, cloves, green cardamom, cumin seeds and black cumin and roast it.
  6. Now add garlic paste, fry it and also fry onion.
  7. Then add mutton and roast it.
  8. Add red chili powder, all spice powder, turmeric powder and garlic paste in yogurt, mix it nicely and roast it.
  9. Now add water as required and cook until meat tender.
  10. When meat is tender and gravy becomes thick, remove it.
  11. For layers: Put eggs in orange food color water as required and leave it.
  12. When color comes on eggs, take it out and fry it.
  13. Spread korma in pot.
  14. Put half rice, eggs, green chilies, fresh coriander and mint leaves.
  15. Then put remaining korma.
  16. In end, put remaining rice, add eggs, orange food color and dry fruits and simmer it.
  17. When simmer is completed, dish out it and serve.
