Bruschetta by Zarnak Sidhwa

Ingredients:

  • French bread 1 loaf
  • Garlic 1 whole pod

For Tomato and Basil Topping:

  • Chopped tomatoes 2
  • Basil leaves 6-8
  • Olive oil 5 tbsp
  • Salt to taste
  • Black pepper to taste

For Mushroom and Garlic Topping:

  • Mushrooms 4
  • Garlic 1 clove
  • Red chili 1
  • Butter 1 tbsp
  • Salt to taste
  • Black pepper to taste
  • Thyme 1 tsp
  • Olive oil 1 tbsp

Method:

  1. Slice bread into two halves from center.
  2. Cut clove of garlic, rub on surface of bread and sprinkle some olive oil on it.
  3. Roast in oven for 5 minutes.
  4. For mushroom and garlic topping: In pan, put butter, oil, garlic, thyme and stir.
  5. Add mushrooms, chopped chilies and toss.
  6. Add salt, pepper and mix.
  7. For tomato and basil topping: In bowl, add all ingredients and mix well.
  8. To serve: Place breas on tray, pile up toppings on it and serve.
