Sweet N Sour Chicken Dumplings by Zarnak Sidhwa

Ingredients:

  • Chicken mince 300 gm
  • Spring onions with greens 4
  • Garlic (chopped) 2 tsp
  • Celery (chopped) 2 tsp
  • Salt to taste
  • Oil 2 tbsp
  • Red chilli paste 1 tsp
  • Red chilli sauce 1 tsp
  • Tomato ketchup 2 tsp
  • Kaffir lime leaves 2-3 leaves
  • Sugar 2 tsp
  • Corn flour 2 tsp
  • Water 1/4 cup
  • Vinegar 1 tsp

Method:

  1. Place chicken mince in bowl.
  2. Chop 1 spring onion bulb and add.
  3. Add 1 tsp chopped garlic, 1 tsp chopped celery and salt and mix.
  4. Heat 2 tbsp oil.
  5. Make small balls of the chicken mixture, add to wok and cook till light golden all around.
  6. Slice 3 spring onion bulbs and add to wok.
  7. Roughly chop spring onion greens and set aside.
  8. Add 1 tsp chopped garlic, 1 tsp chopped celery and 1 cup water to wok and cook.
  9. Add red chilli paste, red chilli sauce and tomato ketchup and mix well.
  10. Cook till chicken balls are completely cooked.
  11. Tear lime leaves and add.
  12. Add salt and sugar and mix.
  13. Add 2 tsp corn flour water and vinegar and mix well.
  14. Add half spring onion greens and mix.
  15. Transfer into serving bowl and serve hot garnished with remaining spring onion greens.
