Khowsuey by Zarnak Sidhwa

Ingredients:

  • Boneless chicken (thin strips) 1/2 kg
  • Oil 5 tbsp
  • Onions (finely chopped) 3
  • Ginger (chopped) 2 tbsp
  • Garlic 4 cloves
  • Salt to taste
  • Crushed red chillies 1 tsp
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1 tsp
  • Chicken stock 2-1/4 cups
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Gram flour 2 tbsp
  • Coconut milk 2 cups
  • Fish sauce 1 tbsp
  • Lemon juice 1 tsp
  • Egg noodles (boiled) 200 gm

Condiments:

  • Eggs (boiled and quartered) 2
  • Lemons (cut into wedges) 2
  • Onions (thinly sliced) 2 medium
  • Coriander leaves 2 tbsp
  • Spring onion greens (chopped) 2 stalks
  • Garlic (sliced and golden fried) 8-10 cloves
  • Crushed red chillies as required
  • Fried noodles 1/4 cup

Method:

  1. Heat 3 tbsp oil in pan.
  2. Add onions and saute till soft.
  3. Add ginger and garlic and saute.
  4. Cool and grind to fine paste.
  5. Heat remaining oil in another pan.
  6. Add salt, 1 tsp crushed red chillies to chicken and mix well.
  7. Add 1 tsp red chilli powder, turmeric powder and mix well.
  8. Add ground paste and 1/2 cup chicken stock, mix well and cook for 2-3 minutes.
  9. Add cumin powder, coriander powder and remaining red chilli powder and mix well.
  10. Add 1-1/2 cups stock and mix.
  11. Take gram flour in bowl.
  12. Add 1/4 cup stock and mix well, ensuring that there are no lumps.
  13. Add this to chicken and mix.
  14. Cook till thick.
  15. Add coconut milk and mix.
  16. Add 1 tbsp fish sauce, lemon juice and mix well.
  17. Add salt, mix well and cook for 2 minutes.
  18. Place boiled noodles in serving bowl.
  19. Pour chicken mixture on top.
  20. Place boiled eggs and lemon wedges.
  21. Put sliced onion, few drops fish sauce, coriander leaves, spring onion greens, fried garlic, 1 pinch crushed red chillies and fried noodles on top.
  22. Serve immediately.
