Vegetable Karahi by Shireen Anwer

Ingredients:

  • Cauliflower 1 cup
  • Potato 1
  • Peas 1/2 cup
  • Carrots 1 cup
  • Green beans 1/2 cup
  • Capsicum 1
  • Tomato 2
  • Ginger garlic paste 1 tsp
  • Tomato puree 2 tbsp
  • Oil 1/2 cup
  • Green chilies 4
  • Coriander leaves 2 tbsp

Ground Coarsely:

  • Black pepper 1/2 tsp
  • Cumin seeds 1 tsp
  • Coriander seeds 1 tsp
  • Whole red chilies 10
  • Salt 1 tsp
  • Kasoori methi 1 tsp
  • Cream 4 tbsp

Method:

  1. Boil cauliflower, potato cubes, peas and green beans.
  2. Now heat oil and put 4 whole red chilies.
  3. When it color changes, add ginger garlic paste and tomato slice and cook until tomato is soft.
  4. Then put grinded masala and tomato puree.
  5. Then put boiled cauliflower, potato, peas, beans and carrots.
  6. Then put capsicum and kasoori methi and cover it for 5 minutes.
  7. Then add cream.
  8. Then garnish with green chilies and green coriander.
