Chocolate Peanut Butter Cupcakes by Zarnak Sidhwa

Ingredients :

  1. Butter : 110 gm
  2. Peanut Butter : 2 tbsp
  3. Sugar : 110 gm
  4. Eggs : 2
  5. Flour : 85 gm
  6. Cocoa powder : 4 tbsp
  7. Baking Powder : 1 tsp
  8. Chocolate chips : 1/2 cup

Peanut Butter Frosting :

  1. Peanut butter : 1 cup
  2. Butter : 1/2 cup
  3. Icing sugar : 4 cups
  4. Cream : 1/2 cup
  5. Vanilla essence : 1/2 tsp

Method :

  • Cream butter, peanut butter and sugar together until light and fluffy and pale in color.
  • Add egg one at a time mixing well between each addition.
  • Sift flour, cocoa powder, salt and baking powder together in a bowl.
  • Add the dry mixture into the creamed butter mixture and fold.
  • lastly add in the chocolate chips and fold.
  • Divide batter into a muffin tray lined with paper cases and bake for about 18 to 22 min at 180C until a skewer inserted into the center come out clean.

For Frosting :

  • Cream butter and peanut butter together.
  • Add icing sugar a vanilla and beat it well until light and fluffy.
  • Add cream to loosen the mixture and to achieve a piping consistency.
