Vegetable Rice With Crispy Egg by Rida Aftab

Ingredients:

  • Rice 1/2 cup
  • Carrots 250 gm
  • Green onions 250 gm
  • Fresh red chilies 4
  • Ginger garlic 1 tsp
  • Stock 2 cups
  • Capsicums 2
  • Mushrooms 1 cup
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Soya sauce 4 tbsp
  • Eggs 6
  • Oil 3 tbsp

Method:

  1. Soak rice for 30 minutes.
  2. Then strain it, add stock and cook it.
  3. When water dries, close stove.
  4. Heat oil, fry carrot, green onions, red chilies, ginger garlic, capsicum, mushrooms, black pepper, salt and soya sauce and cook for 2 minutes.
  5. Then put in rice, mix it and take out in dish.
  6. Then heat oil in frying pan and put 1 egg.
  7. When crispy, put on rice.
  8. Then fry 2 eggs like this and put on rice.

Vegetable Rice With Crispy Egg is Healthy and full of Proteins Dish, prepared with Vegetables, Rice, Mushrooms & Eggs and served with Raita. You can garnish with French Fries and Coriander Leaves.
