Kuku Paka by Zarnak Sidhwa

Ingredients:

  • Onion chopped 1
  • Oil 3 tbsp
  • Chicken 1 kg
  • Tomato finely chopped 1
  • Crushed garlic & ginger 1 tbsp
  • Red chilies crushed 1 tsp
  • Chili powder 1/2 tsp
  • Salt 1-1/2 tsp
  • Cumin powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Bay leaves 2
  • Coconut milk powder 100 gm
  • Boiled eggs 3
  • Boiled or Fried potatoes 3
  • Cream 1/2 cup
  • Coriander leaves 1 tbsp

Method:

  1. Saute onions in hot oil until soft.
  2. Add chicken and cook it.
  3. Then add tomatoes, ginger, garlic, red chilies and remaining ingredients.
  4. Cook for 2 minutes and add water.
  5. Continue cooking until chicken is almost done.
  6. Mix coconut milk powder with 1/2 cup water and add to mixture.
  7. Add more water id necessary, gravy should not cover chicken.
  8. Continue cooking till chicken is done and gravy is reduced to desired thickness.
  9. Add eggs, potatoes, cream and coriander leaves.
  10. Cook for 2 minutes more.
  11. Serve with rice.
