Cheese Beignets by Zarnak Sidhwa

Ingredients:

  • Butter 2 oz
  • Flour 3 oz
  • Eggs 2
  • Chopped parsley 1 tbsp
  • Parmesan cheese grated 2 oz
  • Cheddar cheese grated 1 oz
  • Salt and Pepper to taste
  • Oil to fry
  • Parsley to garnish

Method :

  1. Melt butter, add 2/3 cup water and boil it.
  2. Add flour at once and beat thoroughly until mixture leaves sides of your pan. Cool.
  3. Quickly beat eggs, a little at a time.
  4. Stir in parsley chopped, both cheese, salt and pepper and mix well until all cheese has melted in.
  5. Heat oil and deep fry tbsp of cheese mixture until puffy and golden.
  6. Drain on kitchen paper, fry all likewise and serve garnished with parsley.

Cheese Beignets is common dish in New Orleans. It is served in breakfast. It is prepared with flour & cheese and deep fried in oil.
