Peking Chicken by Chef Gulzar

Ingredients:

  • Whole chicken with skin 1-1/3 to 1-1/2 kg
  • Oyster sauce 4 tbsp
  • Dark soya sauce 6 tbsp
  • Star anise 4
  • Paprika powder 1 tsp
  • All spice powder 1/2 tsp
  • Garlic 6-8 cloves
  • Chicken stock 4 -5 cup
  • Oil for fry

Method:

  1. Put stock, oyster sauce, soya sauce, all spice powder, garlic, paprika and chicken in pan, cover it and cook until chicken tender.
  2. Turn chicken during this time.
  3. Now take out chicken and keep on strainer so that all water dries.
  4. Strain remaining sauce and cook until sauce is thick.
  5. Peking sauce is ready.
  6. Put chicken in empty pan.
  7. Now heat oil and put on chicken until oil is garnished on chicken on all sides.
  8. Then take out chicken and serve with peking sauce.

Peking Chicken is a Chinese dish. It is prepared with whole chicken and served with peking sauce. Chef Gulzar has made this recipe with his technique.
