Chicken Satay Melt by Zarnak Sidhwa

Ingredients:

  • Butter 1 tbsp
  • Bread slice 2
  • Cheddar cheese shredded 1/2 cup
  • Chicken satay shredded 1/4 cup
  • Spicy peanut sauce 2 tbsp
  • Avocado slice 1/2
  • Coriander 1 tbsp
  • Sriracha hot sauce to taste

For Chicken Satay:

  • Roasted & crushed coriander 2 tsp
  • Roasted & crushed cumin 2 tsp
  • Turmeric 1/4 tsp
  • Lemon grass 2 sticks
  • Onion diced 1
  • Garlic grated 1 tbsp
  • Galangal 1 tbsp
  • Red chili slice 1
  • Lemon juice & zest 1
  • Fish sauce 2 tbsp
  • Brown sugar 2 tbsp
  • Oil 1 tbsp
  • Chicken breast stripes 2-3

Method:

  1. Heat pan on medium flame.
  2. Now spread butter on bread slices.
  3. Then put one part of slice in pan and sprinkle cheddar cheese.
  4. Then keep chicken satay, peanut sauce, avocado slice, sriracha hot sauce, coriander and remaining cheddar cheese and keep bread slice.
  5. Now grill it from both sides until golden brown or till cheese melts for 2-4 minutes.
  6. You can make it in sandwich maker.
  7. For chicken satay: Mix all ingredients except chicken breast nicely.
  8. Now marinate chicken with marination and keep in fridge for 1 hour or overnight.
  9. Now put in pan, check with skewer and cook until ready.

Chicken Satay Melt is spicy dish. The flavor of cheese, spicy peanut sauce, sriracha sauce & avocado is delicious. It is stuffed with chicken in bread & then it is grilled.
