Ingredients:

  • Sugar 2-1/2 cups
  • Water 4 cups
  • Gram flour 2-1/2 cups
  • Almonds, Pistachios 4 tbsp
  • Yellow color 1/4 tsp
  • Cardamom powder 1 tsp
  • Hot ghee 2-1/2 tbsp
  • Milk 2 tbsp + 1 tsp
  • Extra ghee 1 cup

Method:

  1. Sieve gram flour, put hot ghee and mix with wooden spoon.
  2. Now mix milk and knead with hands so that it becomes in shape of bread crumbs.
  3. Now put ghee in pan, fry gram flour mixture for 10 minutes and stir it.
  4. Then put more milk and fry until light brown.
  5. For sugar syrup: Boil water and sugar for 20 minutes until it becomes do taar.
  6. Now put this syrup in gram flour mixture, cook it and stir it fast.
  7. Then put milk, stir it and remove from stove.
  8. Now put in greased thali, put almonds, pistachios and cardamom powder on top and set for 6-8 hours.
  9. Then cut into pieces and serve.

Monthal is Gujarati, Indian cuisine. It is sweet dish. Gram flour is cooked with milk in ghee, sugar syrup is added and cooked. Placed in greased thali and topped with nuts.
