Pineapple Cherry Squares

Ingredients

  • Biscuit crumbs 4 cups
  • Butter 6 ounces
  • Flakes coconuts
  • Caster sugar
  • Walnut chopped ½
  • Egg 1
  • Vanilla essence 1 tsp
  • Fresh cream whipped 12 ounces
  • Pineapple tidbits 1 cup
  • Chopped cherries ½
 

Method


  1. Spread half biscuits crumbs in a9 inch square cake pan, sprinkle with ½ cup of pineapple syrup and ¼ cup of flakes coconut, beat 6 ounce butter with ½ cup of caster sugar till fluffy.
  2. add in 1 egg and 1 tsp vanilla essence, spread this mixture over flaked coconut in the pan, beat 12 ounces cream with remaining ½ cup caster sugar, fold in the ½ cup nuts1 1 cup pineapple tidbits and ½ cup cherries.
  3. spread over the mixture in the pan sprinkle to with remaining coconut and biscuit crumbs, chill for 4 hours, cut in  square pieces.
  4. Garnish with swirls of fresh cream, pineapple and cheery cubes.
