Kheer Recipes

Kheer is a dessert which has its origin from the South of Asia. It is a pudding made out of boiled rice and broken white with milk and sugar. This is savory dish of the then subcontinent which has now traveled around the world where it has been twisted and tweaked according to the liking and taste of the people living in that part of the world.

Kheer is a dessert which is widely cooked in Pakistan. People of Pakistan make kheer on eid, on weddings, births etc. some people have the ritual that they make a newly wedded wife cook kheer soon after the shaadi, in celebration of her first dish in the new house. Kheer is also a refreshing dessert in Iftar during Ramadan.

The Basic Kheer

The basic recipe is very easy but can take sometime to make.

Ingredients:

  • Fresh milk 2 liter
  • Almonds, Pistachios as required
  • Rice 1/2 cup
  • Condensed milk 1 tin
  • Small cardamom 8
  • Sugar 1-1/2 cup
  • Kalakand 1 cup

Method:

  1. Take rice in a bowl. Wash them properly.
  2. Now soak them in water for at least 15minutes.
  3. Take a pan and pour milk in it.
  4. Cook the milk on low flame until it becomes thick.
  5. When the milk is thick, add rice, cardamom and sugar.
  6. Cook all of these together while stirring it continuously.
  7. When all ingredients are combined, close the stove.
  8. Let it cool down for a while.
  9. When its cool add condensed milk to it.
  10. Add almonds and pistachios and let it cool down
  11. Add crushed kalakand.
  12. When its all set decorated with ground almond, pistachio and silver paper.
  13. Serve chilled.

Apple Kheer

Its always fun to add fruity flavor to dessert. And something that is as healthy as kheer, addition of apple makes it super tasty and healthy.

Ingredients:

  • Grated apples 4
  • Finely chopped dates 25 gm
  • Saffron 1/2 tsp
  • Cardamom powder 1/2 tsp
  • Milk 2 liter
  • Rice 1 cup
  • Almonds, Pistachios 100 gm
  • Kewra 1/2 tsp
  • Condensed milk 1 tin
  • Sugar 1 cup

Method:

  1. Take a sauce pan and pour milk into it.
  2. Put milk on low flame and let it cook.
  3. Cook until the milk becomes thicker.
  4. Add crushed rice and sugar when it is boiling.
  5. Then add grated apples, cardamom powder, sugar, condensed milk and saffron.
  6. Now cook it for 20 minutes on low flame.
  7. When it is fully cooked add almonds, pistachios and dates.
  8. Take it out in a dish.
  9. Garnish with almonds, pistachios and dates.
  10. Serve chilled.

Kaddu Ki kheer:

Just like the apple kheer we discussed above, kaddu ki kheer is one another interesting variation of kheer. This tastes very delicious and is pretty easy to make.

Ingredients:

  • Grated bottle gourd 2 cups
  • Pistachio slice 1 tbsp
  • Milk 1-1/2 cup
  • Cream 1/2 cup
  • Sagodana 3 tbsp
  • Almond slice 1 tbsp
  • Green cardamom 4
  • Sugar 1 cup
  • Ghee 2 tbsp

Method:

  1. Take a pan and put ghee into it
  2. Fry bottle gourd and green cardamom in ghee.
  3. Put milk in the pan and cook the milk until bottle gourd becomes soft.
  4. When bottle gourd is fully cooked add cream
  5. Let it cook for five minutes.
  6. Add sagodanna and half cup of water at this stage.
  7. Cook it until sagodaana becomes soft.
  8. Add sugar at this point and cook
  9. Cook until the kheer becomes thick
  10. Add crushes almonds and pistachio and stir
  11. Serve chilled.

Mughlai Kheer

This kheer has quite a few dry fruits in it that’s why it is called mughlai kheer. Other than that it has rich flavor of saffron.

Ingredients:

  • Milk 2 liter
  • Saffron 1/2 tsp
  • Pistachio 50 gm
  • Silver paper
  • Yellow food color 1 pinch
  • Fresh cream 1 cup
  • Almonds 50 gm
  • Cardamom powder 1/4 tsp
  • Soaked rice 1 cup
  • Khoya 1 cup
  • Coconut 50 gm
  • Sugar 1-1/2 cup
  • Raisins 50 gm

Method:

  1. Take a sauce pan and pour milk into it.
  2. Cook on low flame.
  3. Take a blender and add saffron, one cup milk and soaked rice.
  4. Blend them well together.
  5. Put this mixture into the milk and let it cook until it becomes thick.
  6. Add sugar into it at this point.
  7. Add khoya and yellow color and cardamom powder.
  8. Take it out in dish and let cool.
  9. Garnish with cream, almonds, walnuts, pistachio, raisins, coconut and silver paper.
  10. Serve when chilled.

Date Kheer:

Dates are very healthy and have a lot of energy content in it. Addition of dates in kheer multiplies its health value. This dessert is very good for kids who love to eat sweet dishes.

Ingredients:

  • Fresh milk 1 liter
  • Chopped walnuts 1/2 cup
  • Chopped almonds 10-15
  • Fresh cream 1 packet
  • Biscuits 6
  • Dates 1/2 kg
  • Sugar 1/2 cup

Method:

  1. Take a sauce pan and pour some milk and dates paste into it.
  2. Cook this milk on low flame.
  3. Stir them continuously while cooking.
  4. When it becomes thick add sugar
  5. When milk and dates are cooked add almonds and walnuts.
  6. Take it out in a dish and let it cool.
  7. Garnish with biscuits, almonds, walnuts and cream.
  8. Serve chilled.

Some Tips

  1. Always cook milk on low flame that way it doesn’t burn and desired thickness of evaporated milk is achieved
  2. Before adding pistachios and almonds always boil and peel them. They taste much better.
  3. Stirring kheer constantly is the key. This makes rice soft and same amount of heat is provided everywhere.
  4. Stirring also help in crushing the rice grains, making kheer smooth.
