Ingredients for Keri Ka Dopiaza:

  • Mutton 1 kg
  • Onion 3/4 kg
  • Oil 3/4 cup
  • Fresh ginger 1/4 cup
  • Garlic cloves 1/4 cup
  • Yogurt 1 cup
  • Keri 1 cup
  • Whole red chilli 10-12
  • Whole black pepper 8-10
  • Cloves 6-8
  • Whole green chilli 6-8
  • Cinnamon 3-4
  • Black cardamom 4
  • Green cardamom 4
  • Coriander leaves 1/2 bunch
  • Salt to taste
  • Cumin 1 tsp
  • Turmeric 1/2 tsp
  • Chapati for serving
  • Boiled rice for serving

Method:

  1. Heat oil in one pan. Then add chopped onion, chopped ginger, chopped garlic, whole red chilli & garam masala and roast it nicely.
  2. Now add mutton and cook it until it color changes.
  3. Then add some water, salt & turmeric and cook on low flame until mutton cooked well.
  4. In end, add keri cubes & whipped yogurt, cover it and cook until oil separates.
  5. Add whole green chilli and chopped coriander leaves.
  6. Serve with hot chapati, raita and salad.

Ingredients for Keri Ka Goramba:

  • Keri 2 big
  • Water 3 cup
  • Sooji 1 cup
  • Sugar 1 cup
  • Ghee 1/2 cup
  • Small cardamom seed 1/2 tsp
  • Raisin 2 tbsp

Method:

  1. In on pan, cook 2-1/2 cup water & sugar for 10 minutes and make syrup.
  2. In separate pan, cook keri slice & 1/2 cup water until keri cooked well.
  3. Now add cooked keri in syrup and cook for few minutes.
  4. When syrup becomes low, close the stove.
  5. In one sauce pan, add ghee, cardamom & sooji and cook.
  6. Roast until sooji changes its color.
  7. Together mix keri syrup, cook on high flame for 5 minutes until water dries.
  8. In end, add raisin.
  9. Take out in serving platter and serve hot.
