Chicken Samosa And Sawayon Ka Zarda by Chef Afzal Nizami

Ingredients for Chicken Samosa:

  • Chicken mince 1/2 kg
  • Egg 2
  • Manda patiyan 24
  • Green chillies 6-8
  • Cumin 1 tsp
  • Whole coriander 1 tsp
  • Ginger garlic paste 1 tbsp
  • Turmeric 1/2 tsp
  • Oil for frying
  • Coriander leaves as required
  • Salt to taste

Method:

  1. Blend green chillies.
  2. In one pot, add mince, ginger garlic paste, blended green chillies, salt, turmeric & water and cook it.
  3. When water dries, remove from stove.
  4. Now add coriander leaves, cumin & coriander and mix it. Then chilli it.
  5. Fill manda patiyan with mince, spread egg white and seal it.
  6. Fry in hot oil and serve with hari chutney.

Ingredients for Sawayon Ka Zarda:

  • Milk 100 gram
  • Seviyan 600 gram
  • Pistachios 100 gram
  • Almonds 100 gram
  • Sugar 500 gram
  • Water 600 gram
  • Ghee 150 gram
  • Coconut powder 50 gram
  • Zarda color as required
  • Cardamom 6
  • Cloves 4

Method:

  1. Heat ghee in one pot, add cardamom, cloves & seviyan and roast on low flame.
  2. Now in separate pot, make syrup of water and sugar. Then add zarda color.
  3. Now add syrup & milk in seviyan and leave on simmer.
  4. Take out in serving dish after 10 minutes.
  5. Garnish with almonds, pistachios & coconut and serve it.
