Sardai And Amritsari Paneer by Chef Mehboob

Ingredients for Sardai:

  • Milk 2 cup
  • Water 2 cup
  • Sugar 6 tbsp

For Making Paste:

  • Almond 20
  • Black pepper 10
  • Poppy seeds 2 tbsp
  • Water melon seeds 1-1/2 tbsp
  • Small cardamom 1/2 tsp

Method:

  1. Soak poppy seeds, water melon seeds and small cardamom in some water for 30 minutes.
  2. Take out from water, grind with blanched almond and make thin paste.
  3. Now add half cup water and strain with malmal cloth. Then add milk and remaining water.
  4. Together mix sugar, cool it and serve it.

Ingredients for Amritsari Paneer:

  • Cottage cheese 1/2 kg
  • Carom seeds 1 tsp
  • Red chilli powder 1 tsp
  • Chaat masala 1 tsp
  • Ginger garlic paste 2-1/2 tbsp
  • Gram flour 6-7 tbsp
  • Lemon juice 2 tbsp
  • Oil for deep fry
  • Salt to taste
  • Orange color few drops
  • Green chilli 4-5

Method:

  1. Cut cottage cheese into shape of thin fingers.
  2. Mix ginger garlic paste, carom seeds, orange color, salt, green chilli, red chilli powder and lemon juice in one bowl and
  3. make paste.
  4. Marinate paneer fingers in it and leave for 30 minutes.
  5. Heat oil in pan at time of serving, sprinkle gram flour on paneer fingers, mix with light hands and coat it.
  6. Now deep fry it until golden brown and crispy.
  7. Take out in dish. Sprinkle chaat masala and serve hot.
