Lauki Ki Achari Sabzi, Pickle Rice And Makhni Fry Mong Ki Daal by Rida Aftab

Ingredients for Lauki Ki Achari Sabzi:

  • Bottle gourd 1 kg
  • Yogurt 250 gm
  • Tomato 2
  • Turmeric 1 tsp
  • Cumin seeds 1 tsp
  • Red chili powder 2 tsp
  • Salt 1/2 tsp
  • Mustard seeds 1/2 tsp
  • Onion seeds 1/2 tsp
  • Fennel seeds 2 tsp
  • Lemon juice 2 tbsp
  • Green chilies 4
  • Fresh coriander 1/2 bunch
  • Garlic 2 cloves
  • Oil 1/2 cup
  • Coal 1

Method:

  1. Firstly, boil bottle gourd with turmeric and 1 glass water. When bottle gourd is tendered, then turn off the stove.
  2. Now heat oil in one frying pan, put garlic cloves and fry it. When fragrance starts coming, put cumin, chopped red chili, salt, mustard seeds, onion seeds, fennel seeds and tomato and roast it .
  3. Now put boiled bottle gourd and roast on high flame.
  4. Then put yogurt, green chilies and green coriander and dry water on high flame,
  5. In end, put lemon juice and give smoke of coal.

Ingredients for Pickled Rice:

  • 1/2 kg boiled rice
  • 250 grams tomatoes
  • 6 curry leaves
  • 6 green chilies
  • 1 cup oil
  • 1/2 bunch coriander
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 1/2 onion seeds
  • 1/2 tsp fennel seeds
  • 2 tbsp lemon juice

Method:

  1. Heat oil in one pan, put mustard seeds, fenugreek seeds, onion seeds and fennel seeds and fry it.
  2. When fragrance starts coming, put tomato, green chili, turmeric, salt, chopped red chilies and curry leaves.
  3. After that, put boiled rices and simmer for 10 minutes.
  4. Delicious Achari Rice is ready.

Ingredients for Makhni Fry Mong Ki Daal:

  • Yellow lentils 250 gm
  • Tomatoes 4
  • Green chilies 6
  • Curry leaves 6
  • Coriander leaves 1/2 bunch
  • Butter 100 gm
  • Turmeric 1 tsp
  • All spice 1 tsp
  • Salt 1 tsp
  • Garlic chopped 1 tbsp
  • Cumin powder 2 tsp
  • Crushed red pepper 2 tsp
  • Oil 2 tbsp

Method:

  1. Firstly, soak yellow lentils in water before 30 minutes.
  2. Boil 4 cups water. When it is boiled, put turmeric and soaked lentils and cook for 5 minutes.
  3. Now strain lentils and waste water. Then put oil and butter and fry garlic.
  4. After that, add curry leaves, tomato, chopped cumin, chopped red chili and salt and keep on low flame for 10 minutes.
  5. In end, put yellow lentils, green chilies, green coriander and garam masala, cover it, cook for 10 minutes and serve.
