Basin Ki Khandvi, Basin Squares And Cold Salad by Chef Gulzar

Ingredients for Basin Ki Khandvi:

For Khandvi:

  • Gram flour  2-1/2 cups
  • Cottage cheese 1 cup
  • Coconut 1 cup
  • Oil 1 cup
  • Green chilies 2-3
  • Green coriander 1/2 bunch
  • Milk 1/2 cup
  • Turmeric powder 1 tsp
  • Ginger garlic paste 1 tbsp
  • Lemon juice 1 tbsp
  • Salt to taste

For Gravy:

  • Tomato puree 1 cup
  • Yogurt 1 cup
  • Onion paste 1 cup
  • Turmeric 1 tsp
  • All spice powder 1 tsp
  • Cumin powder 1 tsp
  • Ginger garlic paste 2 tbsp
  • Red chili powder 1-1/2 tbsp
  • Oil 3-4 tbsp
  • Salt to taste


  1. For making basin khandvi: Add ginger garlic paste, turmeric, salt, lemon juice and milk in gram flour and mix it nicely.
  2. Then cook gram flour mixture in one pan on low flame.
  3. When mixture becomes thick, mix cottage cheese, coconut, chopped green coriander and green chilies and remove it.
  4. Then grease tray with oil and spread mixture.
  5. When it becomes chill, cut into pieces.
  6. For making gravy: Put oil in one pan and fry until light brown.
  7. Then add ginger garlic paste, and fry for 1 to 2 minutes.
  8. Then beat tomato puree and yogurt and put in it.
  9. Together add red chili powder, chopped turmeric, chopped garam masala, cumin and salt and roast them nicely.
  10. When mixture becomes dry and leaves oil, add khandvi pieces and mix it.
  11. In end, take out in dish, garnish with coriander leaves and serve.

Ingredients for Basin Squares:

  • Gram flour 1/2 kg
  • Sugar 1 kg
  • Clarified butter 1/2 cup
  • Glucose as required
  • Coconut as required
  • Almonds and pistachio for garnish


  1. Put ghee in one pan.
  2. Now add gram flour, mix it and roast it.
  3. Then put coconut.
  4. Now put water in one pan, add sugar and make syrup.
  5. Now put syrup and glucose in gram flour pan and mix well.
  6. Spread oil in one serving tray and put gram flour mixture immediately.
  7. Level it with wet hand and garnish with almonds and pistachio.
  8. In end, cut into square pieces and serve.
  9. Basin square is ready.

Ingredients for Cold Salad:

  • Carrots 2
  • Chopped cabbage 1
  • Tomatoes (sliced) 1
  • Salad leaves 2-3
  • Mayonnaise 1/2 cup
  • Raisins 2 tbsp
  • White pepper 1/2 tsp
  • Salt to taste


  1. For Dressing: Add mayonnaise, white pepper and salt in one mixing bowl, beat it with one batter and make mixture.
  2. For Salad: Cut finely cabbage, tomato and carrot.
  3. Now add in mixture and mix it nicely.
  4. Then garnish with raisins and serve.
