Koftay, Methi Daal And Russian Salad Pita Sticks by Chef Meadha Rahat

Ingredients for Koftay:

  • Mince  800 gm
  • Coriander  1/4 cup
  • Ginger garlic paste  2 tbsp
  • Salt  to taste
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Mix spice powder  1 tbsp
  • Onion  1 big
  • Fried onion  as required

For Gravy:

  • Oil  1 cup
  • Coriander powder  1 tbsp
  • Ginger garlic paste  1 tbsp
  • Mix spices powder 1 tbsp
  • Yogurt  1 cup
  • Ginger  1 pieces
  • Salt  to taste
  • Coriander  for garnish
  • Fried onion  as required
  • Naan or rice  for serving

Method:

  1. For making koftay: Add green coriander, ginger garlic paste, salt, red chili powder, coriander powder, mix spice powder and onions in mince.
  2. Now make koftay of this mixture.
  3. For gravy: Heat  oil and put all masala and roast it.
  4. Then add koftay, roast it and put yogurt.
  5. Together add fried onions, roast it and cook it.
  6. In end, put water and mix spice powder and simmer for 10 minutes.
  7. When ready, serve hot.

Ingredients for Methi Daal:

  • White lentil  1/2 kg
  • Green chili  5-6
  • Onion  1-2
  • Tomato 3-4
  • Small fenugreek 250 gm
  • Salt to taste
  • Black pepper  1-8
  • Cloves  5-7
  • Turmeric powder 1/2 tsp
  • Coriander powder  1 tsp
  • Garlic ginger powder  1-2 tbsp
  • Cumin  1 tsp
  • Red chili whole  1-2
  • Coriander  for garnish
  • Oil  1 cup

Method:

  1. Soak white lentil for 1 hour.
  2. Heat oil in one pan and fry onions until light brown. Together add ginger garlic paste and roast it lightly.
  3. Now put coriander powder, turmeric, black pepper, tomato, green chili and salt and roast masala.
  4. Then put soaked lentil and cook on low flame.
  5. In end, put small fenugreek and simmer it.
  6. When ready, serve hot.

Ingredients for Russian Salad Pita Sticks:

  • Potato  03
  • Carrot  02
  • Mushrooms  2 cups
  • Yogurt, lemon juice  1-2 tbsp
  • Salt  1 tbsp
  • Coriander  2 tbsp
  • Chicken breast  300 gm
  • Eggs 04
  • Cream  1/4 cup

Method:

  1. Cut all vegetables in small pieces and boil it.
  2. Boil chicken and cut into cubes.
  3. Mix yogurt, lemon juice and mayonnaise well.
  4. Now mix all vegetables and add mushrooms
  5. Serve with boil eggs.
