Coffee Mousse, Double Decker Fish Burger And Vegetarian Roast by Chef Gulzar

Ingredients for Coffee Mousse:

For Mousse:

  • White flour  150 gm
  • Icing sugar  2 cup
  • Cooking chocolate  200 gm
  • Irish coffee  4 tbsp
  • Cream  1 cup
  • Egg  6
  • Baking powder  1 tsp

For Topping:

  • Milk  1 cup
  • Sugar  2 tbsp
  • Coffee  3 to 4 tbsp
  • Cream  1/2 cup
  • Crushed chocolate  as required

Method:

  1. For Making Sauce: Separate the egg white and egg yolk.
  2. Beat the egg white and keep it on a side.
  3. Melt the chocolate, egg yolk, cream and beat it nicely.
  4. Now add icing sugar, baking powder, Irish coffee, mix it with water and beat it.
  5. Now add flour and fold it.
  6. In end, add egg white and mix it well.
  7. Do the filling in cup and place it in preheated oven for 15 to 20 minutes.
  8. Take it out and keep it on a side.
  9. Method for Making Topping: Pour milk, add sugar, coffee and cook it until the sauce becomes thick.
  10. Now put it on a mousse.
  11. In the end garnish it with cream and put chocolate crush on its top then serve.

Ingredients for Double Decker Fish Burger:

  • Fish boneless  300 gm
  • Garlic paste 1 tbsp
  • Black pepper  1/2 tsp
  • White pepper  1/2 tsp
  • Corn flour  1 cup
  • Egg  1 to 2
  • Bread crumbs 2 cup
  • Chinese salt  1/4 tsp
  • Oil  for fry
  • Salt  to taste

For Garlic Green Sauce:

  • Cream  1/2 cup
  • Mayonnaise 1/2  cup
  • Green chilies 3 to 4
  • Boiled garlic  10 to 15
  • White pepper  1 tsp
  • Chinese salt  1/2 tsp
  • Salt  to taste

For Burger:

  • Bun  4
  • Cheese sliced 4 to 5
  • Ice berg  as required
  • Oil  for fry
  • Salt  to taste

Method:

  1. For Fish Patty: First put the fish, garlic paste, chopped black pepper, white pepper, chinese salt, salt in a chopper and make paste of it.
  2. Now make the patty of it
  3. Then heat the oil in a pan.
  4. Then coat the patty with cornflour, egg, bread crumbs and fry it.
  5. Take it out and keep it on a side.
  6. For Making Sauce: For sauce, add cream, mayonnaise, green chilies,garlic, white pepper, chinese salt mix it well.
  7. Sauce is ready, Make 4 pieces of 2 buns.
  8. Put the required iceberg in bun and add cheese slice and hot kabab on its top, put another kabab, and repeat it again, place bun piece on its top and then serve.

Ingredients for Vegetarian Roast:

  • Boiled rice 250 gm
  • Mix vegetable  1/2 kg
  • Lemon juice  3 tbsp
  • Worcester sauce  2 tbsp
  • Vinegar  3 tbsp
  • Black pepper  1 tsp
  • Mustard paste  1 tsp
  • Mozzarella cheese  200 gm
  • Oil  2 to 3 tbsp
  • Salt  to taste
  • Green coriander for garnish
