Kashmiri Gushtaba, Modure Pulao And Shier Chai by Chef Gulzar

Ingredients for Kashmiri Gushtaba:

For Meat Balls:

  • Beef mince 1/2 kg
  • Fat  125 gm
  • Onion  1
  • Garlic paste 2 tbsp
  • Black pepper  1 tsp
  • White pepper  1 tsp
  • Egg  1
  • Bread slices  3-4
  • Salt  to taste

For Gravy:

  • Onion  1
  • Garlic paste  1 tbsp
  • Yogurt  250 gm  
  • Fennel seeds  1/2 tsp
  • Small cardamom 2-3
  • Dig cardamom  2-3
  • Cloves  3-4
  • Red chili powder  1 tbsp
  • Turmeric  1 tsp
  • All spice powder  1 tsp
  • Coriander powder  1 tsp
  • Stock  1 liter
  • Oil  2-3 tbsp
  • Salt  to taste

Method:

  1. For making kofta: Add mince, fat, onion, garlic paste, chopped red chili, chopped white pepper, chopped black pepper, whopped white pepper, egg, bread slices, salt, mix them well and put it in chopped.
  2. Take it out and make koftas then keep it on aside.
  3. For making Gravy:  Pour oil heat it add chopped small cardamom, curry leaves, big cardamom, cloves, make them crispy. Now add garlic paste, onions for frying.
  4. Then add chopped fennel, chopped red chili, chopped turmeric, chopped garam masala, chopped coriander, salt, yogurt, roast it well.
  5. After that add stock, make the gravy thick, Now put the raw koftas in it and simmer it.
  6. When it is simmered well, dish out and serve.

Ingredients for Modure Pulao:

  • Rice  1/2 kg
  • Sugar  1 cup
  • Raisins  1/2 cup
  • Dates  1/2 cup
  • Coconut  1/2 cup
  • Melon seeds  1/2 cup
  • Almonds  1/2 cup
  • Black peppercorn  2 tbsp
  • Cinnamon  2-3 sticks
  • Small cardamom  2-3
  • Big cardamom 1 tsp
  • Khewra essence  dew drops
  • Yellow food color 1 pinch
  • Flour  400 gm
  • Clarified butter  1 cup

Method:

  1. Wash the rice and soak in water.
  2. Then boil it to 1/4 th filter it.
  3. Pour oil in a pan, add ghee, cinnamon, small cardamom, whole red chilies, big cardamom, whole black pepper, big cardamom, make them crispy.
  4. Now add sugar, water cook it well it the the syrup becomes.
  5. Then add raisin, dates, coconut, melon seeds, almonds mix it well.
  6. Now add rice, water, yellow color and mix it well.
  7. Simmer it well, dish out and serve.

Ingredients for Shier Chai:

  • Tea  2 tbsp
  • Milk  250 gm
  • Cream  1/2 cup
  • Green cardamom  2-3
  • Poppy seeds 1 tsp
  • Cinnamon  1 stick
  • Ginger  1 inch piece
  • Soda  1/3 tsp
  • Salt  to taste

Method:

  1. Pour water and tea and boil it.
  2. Now add chopped soda, cardamom, salt, cinnamon and ginger and cook it well.
  3. When the tea starts to cooked then pour milk add poppy seeds and mix it.
  4. In end, dish out, put cream and serve.
