Punjabi Kheer, Chatpata Maghaz Masala And Dhaba Chicken Karahi by Zubaida Tariq

Ingredients for Punjabi Kheer:

  • Fresh milk 1 liter
  • Cardamom 6
  • Sugar 1 tsp
  • Rice 3 tbsp
  • Khoya 250 gm
  • Saffron 1 pinch
  • Sugar 2 cups
  • Boiled almonds & pistachio

Method:

  1. Add small coriander, sugar and grind it nicely.
  2. Now add fresh milk in a pan, cook it well.
  3. When the milk becomes thick, add chopped rice, cold milk, saffron, mix it well to make the milk thick.
  4. Then add chopped sugar, stir the spoon. When kheer becomes thick then turn off the stove.
  5. Now add coconut and beat it.
  6. In end, put on hand, add chopped pistachio and almonds and serve.

Ingredients for Chatpata Maghaz Masala:

  • Brain 1
  • Lemons 2
  • Chopped onions 3
  • Green chilies 4
  • Oil 1 cup
  • Yogurt 1/2 cup
  • Green coriander 1/2 bunch
  • All spice powder 1 tsp
  • Ginger garlic paste 1 tbsp
  • Red chili 1 tbsp
  • Chopped ginger 2 tbsp
  • Coriander powder 2 tbsp
  • Salt  to taste

To boil brain:

  • Garlic 2

Method:

  1. First wash the brain with water nicely, add garlic cloves, black pepper, boil it nicely, then clean its nerves and make its pieces.
  2. Now pour oil in a pan add chopped onions make them golden brown, take out the half.
  3. Put ginger garlic paste, half onions, yogurt, chopped coriander, chopped red chili,
  4. turmeric, roast it well.
  5. After that add salt, shake it and add brain for roasting it.
  6. Then add chopped green chilies, lemon juice, chopped green coriander, and remaining onions, serve as hot.

Ingredient for Dhaba Chicken Karahi:

  • Ingredients
  • Chicken 1/2 kg
  • Tomatoes 1/2 kg
  • Oil 1/2 liter
  • Green chilies 5
  • Salt  to taste
  • Black pepper 1 tsp
  • Crushed cumin 1 tsp
  • Ginger garlic paste 1 tbsp
  • Chopped ginger 1 tbsp
  • Red chili flakes 1 tbsp

Method:

  1. Pour oil in a pan, add chicken, salt, roast it well, until the chicken turns to golden brown.
  2. After that add ginger garlic paste, roast it for a while.
  3. Add chopped tomatoes, cover and let it cook for 10 minutes.
  4. When the tomatoes becomes soft, peel its skin.
  5. After that add chopped red chilies, roast it for 3 to 4 minutes.
  6. In the end add chopped black pepper, chopped cumin mix it well.
  7. Then add green chilies, cut it from center add chopped ginger simmer it for 5 minutes.
  8. Delicilous Dhaba Chicken Karhai is ready, garnish with ginger and serve.
