Ingredients for Apricot Chicken With Potato Cake:

  • Chicken breast 1-1/2 piece
  • Orange juice 1/4 cup
  • Black olives 3
  • Green olives 3
  • Cherry tomatoes 3
  • Red capsicum 4 small cubes
  • Green capsicum 4 small
  • Mushroom chopped 1
  • Apricot puree 1/4 cup
  • Salt to taste
  • White pepper to taste
  • Lemon juice to taste
  • Olive oil 2 tbsp

For Potato Cake:

  • Potato 1 cup
  • Egg 1
  • Bread crumbs 200 gm
  • Carrot chopped 1 tbsp
  • Green capsicum 1 tbsp
  • Salt to taste
  • White pepper to taste

Method:

  1. For potato cake: In a bowl mix together boiled mashed potatoes, egg, chopped carrot, chopped capsicum, salt and white pepper to taste.
  2. Then make small cake and shallow fry with oil as required.
  3. For chicken: Cut each chicken breast into thin pasanda shape.
  4. Marinate with a little salt and pepper, then shallow for with 2 tbsp olive oil in a frying pan.
  5. Keep aside. For sauce heat apricot puree in a pan, add in orange juice and mix well.
  6. Then add chopped mushroom, chopped green olives, chopped black olives, chopped tomatoes. red capsicum cubes and green capsicum cubes one by one.
  7. Lastly add salt, pepper and lemon juice to taste.
  8. Cook till sauce thickens.
  9. Now in serving plate put a potato cake, top with a piece of chicken.
  10. Again put a potato cake on top.
  11. Then again put another piece of chicken.
  12. Lastly put a piece of rocket on top.
  13. Pour the prepared sauce on sides and serve hot.

Ingredients for Citrus Medley With Pound Cake Triangle:

  • Orange juice 1/2 cup
  • Golden raisin 8 -10
  • Sugar 1 tsp
  • Fresh strawberries 6-8
  • Fresh orange 1
  • Lemon juice 1 tsp
  • Lemon slice 1
  • Mint leaves  4-5
  • Brown sugar 1/2 tbsp
  • Strawberry juice 1/2 cup
  • Fruit cake 100 gm
  • Vanilla ice cream 1 scoop

Method:

  1. In a sauce pan put together orange juice, lemon juice, strawberry juice, golden raisin, sugar and brown sugar.
  2. Cook till sauce thickens.
  3. Remove from fire and keep aside.
  4. Cut strawberries into cubes, remove pulp of the orange and mix with the strawberry cubes.
  5. Add in mint leaves and mix well.
  6. Now line a serving glass with slice, top with fruit mixture, pour juice mixture on top.
  7. Garnish with cake slices, strawberry slices and lemon slices.
  8. Top with a scoop of vanilla ice cream and serve.
