Achari Karahi, Imli Chawal And Podina Gosht by Zubaida Tariq

Ingredients for Podina Gosht:

  • Mutton 1/2 kg
  • Mint leaves 3 bunches
  • Red chilies 8
  • Garlic 1
  • Green chilies 6
  • Butter 1 tbsp
  • Salt to taste
  • Black pepper 1 tsp
  • Lemons 2
  • Chopped onion 3
  • Oil 1 cup

Method:

  1. Add whole red chilies, garlic, chopped mint, green chilies in a blender.
  2. Now pour oil in a pan, add chopped onions make them golden brown, take out half onions and spread it.
  3. Now put the mutton, salt in a remaining onions, make the water dry.
  4. Then roast it lightly, pour the water so that the mutton is tendered.
  5. When the water dries then add ready chutnay for roasting.
  6. When the oil starts to separate then pour lemon juice, chopped black pepper, simmer it for 10 minutes.
  7. Delicious mint mutton, while serving then add remaining onions.

Ingredients for Achari Karahi:

  • Chicken 1
  • Yogurt 1 cup
  • Tomatoes 2 tbsp
  • Chopped ginger 8 cloves
  • Onion seeds 1 tsp
  • Coriander seeds 1 tbsp
  • Red chilies 8
  • Turmeric 1 tsp
  • Lemons 3
  • Salt to taste
  • Chopped onion 2
  • Curry leaves few
  • Oil 1 cup
  • Green chilies  4

Method:

  1. Pour oil in a pan, add chopped onion make it golden brown.
  2. Now take out the onions, add chicken pieces, salt, turmeric, roast it well dry its water.
  3. When the water is dried add tomatoes, chopped onion, garlic cloves, chopped ginger, whole red chili, onion seeds, whole coriander, curry leaves and let it cook.
  4. When the water of tomatoes dries, serve it with hot naan.

Ingredients for Imli Chawal:

  • Rice 2 to 2-1/2 cup
  • Gram lentil 1 cup
  • Turmeric 1 tsp
  • Salt to taste
  • Red chilies 8
  • Fenugreek seeds few
  • Tamarind paste 1/2
  • Curry leaves few
  • Green chilies 4
  • Crushed white cumin 1 tsp
  • Ginger garlic paste 1 tbsp
  • Oil 1 cup

Method:

  1. First wash the rice, change its water for 2 times, then add fresh water, some salt and boil it to 2/4, then change its water.
  2. Boil the gram lentil, keeping in mind that it remain spread, when the gram lentil get tendered change its water.
  3. Now pour oil in a pan, add fenugreek seeds.
  4. When it start to smell, then add salt, turmeric, curry leaves, roast it well.
  5. Now add rice, red chili, green chili, chopped white cumin roast it well.
  6. After that mix and simmer it well.
  7. Delicious imli chawal is ready.
