Ingredients For Mexican Chalupas:

Ingredients For Tortillas:

  • Flour  2 cups
  • Baking powder 1/2 tsp
  • Salt  1/2 tsp
  • Oil  2 tbsp
  • Warm water  to knead

Ingredients For Chili Beef:

  • Mince  250 gm
  • Chili powder  1 tsp
  • Black pepper  1/2 tsp
  • White cumin  1 tsp
  • Salt  1 tsp
  • Oregano  1/2 tsp
  • Ginger garlic paste  1 tsp
  • Flour  1 tbsp
  • Kidney beans  1/2 can
  • Tomato puree  1/2 cup
  • Oil  2 tbsp
  • Capsicum  2 tbsp
  • Green chilies  2

Ingredients For Salsa Sauce:

  • Oil  2 tbsp
  • Garlic paste  1/2 tsp
  • Tomato sauce  2 tbsp
  • Onion chopped  2 tbsp
  • Tomatoes deseeded  4 
  • Salt  1/2 tsp
  • Red pepper  1/2 tsp
  • Sugar 1 tsp

Ingredients For Topping:

  • Grated cheddar  4 tbsp
  • Sour cream  4 tbsp
  • Salsa  4 tbsp
  • Spring onion  4 tbsp
  • Sweet corn  1/2 cup

Method:

  1. For Tortillas:mix flour, baking powder, salt and oil altogether.
  2. Knead with lukewarm water. Dough should be soft.
  3. Cover with cloth and leave for 1/2 hour.
  4. Roll the dough of the size of quarter plate and fry till crisp.
  5. For salsa sauce: heat up oil in a pan and fry onions and garlic paste for two minutes.
  6. Add tomato puree, deseeded tomatoes, salt, crushed red pepper, and sugar.
  7. Add water and cook till it thickens.
  8. For chili beef filling:heat up oil in a pan and fry ginger garlic paste, mince, flour, chili powder, black pepper powder, white cumin powder, salt, oregano, finely chopped capsicum, green chilies and tomato puree.
  9. Cook for 5 minutes.
  10. Add 1 cup of water and cook till mince tenders.
  11. Add kidney beans and cook for 1-2 minutes.
  12. How to serve:plate 4 tortillas in a plate, put chili beef over it, then pour salsa sauce, than sour cream, spring onion, sweet corn and grated cheddar cheese.

  • Kidney beans  14 ounce
  • Sweet corn  8 oz can
  • Green bell pepper 1
  • Green chili 1
  • Onion  1
  • Coriander  1 bunch
  • Garlic 1 clove
  • Salt  to taste
  • Pepper  to taste
  • Tomato deseeded  1

Ingredients For The Dressing:

  • Limes  2
  • Salt  to taste
  • Pepper  to taste
  • Caster sugar  1/4 tsp
  • Oregano  1 tbsp
  • Olive oil  4 tbsp

Method:

  1. Drain the beans and corn well and set aside in bowl.
  2. Chop the onion, green chili, red pepper and tomato into 1 cm cubes.
  3. Mix with the beans.
  4. And season lightly with salt and pepper.
  5. To make the dressing beat the oil, lime juice, zest of lime, oregano and salt and pepper and sugar until well combined.
  6. Pour over salad toss well to combine and allow it to sit for 15 to 20 minutes.
  7. Now before serving, garnish with coriander and serve.

Ingredients For Strawberry Delight:

  • Milk  1 liter
  • Sugar  1 cup
  • Eggs  2
  • Corn flour  2 tbsp
  • Vanilla essence few drops
  • Red color  a pinch
  • Strawberries  1 kg
  • Cream  1 packet
  • Strawberry ice cream  2 scoops
  • Strawberry jelly  1 packet
  • Lemon juice 1 tsp
  • Water  1/2 cup

Method:

  1. Boil milk with 1 cup sugar, add in 2 beaten eggs and mix well using whisk.
  2. Then add corn flour and mix well.
  3. Cook till custard thickens.
  4. Now add a pinch of red color and few drops of vanilla essence.
  5. Mix well and remove from fire.
  6. Put in refrigerator.
  7. In  a pan put together 1/2 cup water and sliced strawberries.
  8. Then add 4 tbsp sugar and cook till soft.
  9. Lastly add 1 tsp lemon juice and remove from fire, keep aside to cool it down.
  10. Separately beat 1 packet cream very well, add cooked strawberries to the prepared custard.
  11. Now 2 scoops of strawberry ice cream in each serving glass, top with prepared custard, cover with strawberries, lastly pour the beaten cream on top.
  12. Garnish with strawberry jelly cubes and serve chilled.
