Keri Chicken And Guramba by Chef Gulzar

Ingredients For Keri Chicken:

  • Chicken 1/2 kg
  • Yogurt 250 gm
  • Onion 1
  • Raw mango 2
  • Chopped ginger garlic  2 tbsp
  • Green chilies 5 to 6
  • Pan jar borage gao zaban 10 gm
  • Crushed red chili  1 tsp
  • Crushed cumin 1/2 tsp
  • Black pepper 1/2 tsp
  • All spice powder 1/2 tsp
  • Turmeric powder  1/2 tsp
  • Oil  1/2 cup
  • Salt to taste

Method:

  1. First pour oil in a pan, add chopped onions, add chopped ginger garlic paste for frying.
  2. Now add chicken for roasting.
  3. Then add yogurt, beat it well.
  4. Now add pan jar borage gao zaban, chopped red chilies, chopped black pepper, chopped cumin, chopped garam masala, turmeric, salt mix it well roast it.
  5. Then add chopped green chilies, mix it well and cook it.
  6. When the chicken tenders then take it out in a dish then serve.

Ingredients For Guramba:

  • Jaggery 250 gm
  • Grated raw mango 500 gm
  • Nigella seed 1/3 tsp
  • Roasted cumin 1/2 tsp
  • Crushed red chili 1 tsp
  • Pan jar borage gao zaban 10 gm
  • Clarified butter  3 to 4 tbsp

Method:

  1. Pour oil in a pan, add jaggery.
  2. When it becomes thick then take it out and keep it on a side.
  3. Then pour ghee, add roasted cumin, nigella seed, pan jar borage gao zaban, chopped red chilies, grated raw mango roast it.
  4. Then add jaggery, cook it in syrup, dish out it and then serve.
