Shrewsbury Biscuits, Four Seasons Pizza And Wheat Crackers by Zarnak Sidhwa

Ingredients For Shrewsbury Biscuits:

  • Butter  125 gm
  • Caster sugar 3/4 cup
  • Egg yolk  2
  • Flour 1-1/2 cups
  • Lemon rind  1
  • Rose water  1 tbsp

Method:

  1. Beat butter and sugar until light and fluffy.
  2. Add egg yolk and beat well.
  3. Stir in flour and grated lemon rind and rose water and mix to a fairly firm dough.
  4. Turn out the dough onto a lightly floured surface and knead lightly to get smooth dough.
  5. Roll it out, using a cookie cutter cut into rounds.
  6. Place these rounds on the greased baking trays keeping sufficient distance between each.
  7. Bake in the preheated oven at 180 degrees C for about fifteen minutes or until biscuits are firm and a very light brown.
  8. Turn them over onto a wire rack to cool completely using before storing in an airtight tin.

Ingredients Four Seasons Pizza:

For Dough:

  • Olive oil  2 tsp
  • Cheddar cheese  1/2 cup
  • Mozzarella cheese  1 1/2 cups

For BBQ Chicken:

  • Onion chopped 1 tbsp
  • Chicken chunks 1/2 cup
  • BBQ sauce  3 tbsp

For Margherita Pizza Square:

  • Parmesan cheese 1 tbsp
  • Tomato, sliced 1
  • Fresh basil  1 tbsp

For Hawaiian Pizza Square:

  • Pizza sauce 2 tbsp
  • Smoked sausages  1/2 cup
  • Pineapple tidbits  1/4 cup

For Pepperoni Pizza Square:

  • Pizza sauce  2 tbsp
  • Pepperoni  4 slices

Method:

  1. Place pizza dough on cookies sheets.
  2. Starting at center, press out dough into a rectangle.
  3. Brush dough with olive oil
  4. Bake 6 to 8 minutes, sprinkle cheddar cheese in the shape of a "plus sign" on crust, dividing the crust into four squares.
  5. Top each square with 1 of the 4 variations listed above to make 4 different squares.
  6. Top entire pizza with mozzarella cheese.
  7. Bake 10-13 minutes longer or until crust is deep golden and cheese is melted and bubbly

Ingredients For Wheat Crackers:

  • Whole wheat flour 1-3/4 cups
  • Flour  1-1/2 cups
  • Salt  3/4 tsp
  • Oil  1/3 cup
  • Water  1 cup
  • Salt for sprinkling

Method:

  1. Preheat the oven to 350 degree F (175 degree C).
  2. In a medium bowl, stir together the whole wheat flour. flour and 3/4 tsp salt.
  3. Pour in the oil and water; mix until just blended.
  4. On a lightly floured surface, roll out the dough as thin as possible- no thicker than 1/8 inch.
  5. Place dough on an ungreased baking sheet, and mark squares out with a knife, but don't cut through.
  6. Pick each cracker with a fork a few times, and sprinkle with salt.
  7. Bake at 175 degree C for 15 to 20 minutes or until crisp and light brown.
  8. When cool remove from baking sheet, and separate into individual crackers.
