Paneeri Naan And Darbari Gosht by Chef Gulzar

Ingredients For Paneeri Nan:

  • White flour  2 cup
  • Yeast  1 to 1 1/2 tsp
  • Sugar  1 tsp
  • Sesame seed  2 to 3 tbsp
  • Melon seed 1 tbsp
  • Egg  1
  • Mozzarella cheese 1/2 cup
  • Butter  1/2 cup
  • Salt  to taste

Method:

  1. First pour water add yeast and sugar mix it.
  2. When the yeast rises then put it into a mixing bowl.
  3. Now add flour, salt and butter and milk knead it well.
  4. Then cover and leave it for 2 to 3 hours.
  5. Now take it out and knead it make the portions.
  6. Roll it and press it with help of fingers.
  7. Sprinkle melon seeds and oil.
  8. Then heat the oven to 200 degree C for 8 to 10 minutes.
  9. When it changes its color then bake it more for 1 to 2 minute.
  10. Take it out then serve.

Ingredients For Darbari Gosht:

  • Mutton leg  1/2 kg
  • Onion  1
  • Cardamom seed 1 tsp
  • Garlic cloves  4 to 5
  • Ginger paste  1 tbsp
  • Tomato paste  2 to 3 tbsp
  • Green chili  3-4
  • Green coriander 1/2 bunch
  • Oil  3 to 4 tbsp
  • Salt  to taste

For Masala:

  • Vinegar  1 to 2 tbsp
  • Mustard seed  1/2 tsp
  • Poppy seed 1/2 tsp
  • Kashmiri chili  4 to 5
  • Cinnamon  1 piece
  • Sesame seed  1 tbsp
  • Whole black pepper 1/2 tbsp
  • Bay leaves  1 to 2
  • Cloves  2 to 3

Method:

For making masala:

  1. Take a pan, add fenugreek seeds, raisins, kashmiri chili, cinnamon, whole black pepper, curry leaves and cloves fry it.
  2. Then add vinegar along paste in a grinder and keep it on a side.

For making darbari gosht:

  1. First paste the masala on the mutton and leave it for 4 to 5 hours coat it along garlic and salt.
  2. Pour oil in a pan, add onions then fry it.
  3. Now add garlic, ginger for frying.
  4. Then add mutton roast it well.
  5. Now add tomato paste, green chilies, green coriander and big cardamom roast it well.
  6. Now pour water tender the mutton pour water, let it cook.
  7. When the mutton is tendered, masala leaves its oil dish out it then serve.
