Chicken Zeera Pulao, Khoya Boti And Turai Ki Bhujia by Chef Zakir

Ingredients For Chicken Zeera Pulao:

  • Chicken 1/2 kg
  • Rice 300 gm
  • Onion 2
  • Green chilies 4
  • Tomatoes 2
  • Ginger  1 piece
  • Coriander seeds  1 tbsp
  • Fennel seeds 1 tbsp
  • Cumin seeds 1 tbsp
  • Salt to taste
  • Oil  125 ml
  • Water  1 1/4 -1 1/2 glass
  • Muslin cloth  as required

Method:

  1. First pour oil add chopped onion fry it lightly.
  2. Now add ginger and chicken fry it well change its color.
  3. Then add fennel seeds, whole coriander, cumin , green chilies, tomatoes, water simmer it well and leave.
  4. Cover it for 8 to 10 minutes remove its cover add rice, salt mix it well.
  5. When water dries then simmer it for 8 to 10 minutes.
  6. Serve the chicken cumin pulao serve it with green raita.

Ingredients For Khoya Boti:

  • Chicken breast 2
  • Yogurt  125 gm
  • Ginger garlic paste 2 tbsp
  • Carom seeds 1/4 tsp
  • Nutmeg mace powder 1/4 tsp
  • Crushed red pepper 1 tbsp
  • Turmeric  1/2 tsp
  • Coriander leaves  1/4 bunch
  • Mint leaves 1/4 bunch
  • Big green chilies 3-4
  • Salt  to taste
  • Oil 2-3 tbsp
  • Khoya  125 gm

Method:

  1. First cut the chicken breast into small cubes.
  2. Now pour oil add ginger garlic paste and chicken cubes fry it well so that chicken becomes tender.
  3. Take a bowl add yogurt, nutmeg, chopped mace, salt, chopped red chilies and turmeric mix it and pour water roast it with chicken.
  4. When water dries then add green coriander, mint, green chilies and khoya mix it well.
  5. Delicious khoya boti is ready.

Ingredients For Turai Ki Bhujia:

  • Ridge gourd 1/2 kg
  • Onion 3
  • Tomatoes 3
  • Coriander leaves 1/4 bunch
  • Crushed red pepper 1 tbsp
  • Crushed cumin seeds 1/2 tbsp
  • Crushed coriander  1/2 tbsp
  • Ginger garlic paste 1 tbsp
  • Turmeric  1 tsp
  • Salt  to taste
  • Oil  as required

Method:

  1. First peel the skin of ridge gourd and take out its seeds.
  2. Now pour oil add ginger garlic paste roast it well.
  3. Add ridge gourd after 6 to 7 minutes.
  4. Then add tomatoes, onions and coriander.
  5. Now add red chilies, salt, cumin and turmeric roast it well dry its water.
  6. Serve the ridge gourd hot.
