Ingredients For Khatti Chicken Keema Biryani:

  • Chicken mince 1/2 kg
  • Red chili powder 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Turmeric 1 tsp
  • Green chilies 10
  • Mint leaves  1 bunch
  • Salt  to taste
  • Crushed cumin  1 tbsp
  • Tamarind paste 1/2 cup
  • Potatoes 4
  • Curry leaves few
  • Green coriander 1/2 bunch
  • Oil 1 cup
  • Chopped onion 3

To Boil Rice:

  • Rice  2 cups
  • Mint leaves 1/2 bunch
  • Green chilies 3
  • Black peppercorns 4
  • White vinegar 1 tbsp
  • Salt to taste
  • Fresh milk 1/2 cup
  • Yellow food color some
  • Lemons  2

Method:

  1. First take a pan, pour oil add chopped onions make it golden brown take it out in tissue spread it.
  2. Now add chicken mince, salt, turmeric, chopped red chilies and ginger garlic paste, roast it well.
  3. Then add green chilies for frying fry the mince lightly.
  4. Then add white cumin, tamarind thick paste, few curry leaves roast it for 5 minutes.
  5. Now add rice wash it, then add salt, mint, green chilies, whole black pepper and white vinegar, boil it 2/4th and change its water.
  6. Peel the skin of potatoes, cut them and make them golden brown.
  7. Now pour oil in its base and spread the ready mince.
  8. Then add onions and potatoes.
  9. Put remaining rice and fresh milk add pinch of yellow color.
  10. Then add lemon juice simmer it well.
  11. When it steam up then take out the biryani in a dish and add fried onions then serve.

Ingredients For Potato & Rice Kabab:

  • Boiled rice  1 cup
  • Chicken/ beef mince 1/2 kg
  • Red chili flakes 1 tbsp
  • Bread slices 2
  • Black pepper  1 tsp
  • Boiled potatoes  1/2 kg
  • Mint leaves  1 bunch
  • Green coriander 1 bunch
  • Green chili  8-10
  • Cottage cheese 1 packet
  • Egg whites  2
  • Bread crumbs 1 packet
  • Salt  to taste
  • Oil  to fry
  • Ginger garlic paste 1 tsp
  • Soya sauce  2 tbsp

Method:

  1. First take a mince in a pan, add ginger garlic paste and salt dry its water.
  2. Now add boiled rice, mash it and mix it into mince.
  3. Then add rice, mince, bread slices and soya sauce chop it well.
  4. Now add boiled potato, salt, chopped black pepper, green chilies, green coriander, mint, grated cottage cheese.
  5. After that add cutlets, dip them into egg white and paste bread crumbs.
  6. Fry them into hot oil make it golden brown.
  7. Potato and rice kababs are ready.

Ingredients For Khara Masala Chicken:

  • Chicken 1 kg
  • Oil 1 cup
  • Chicken 1 cup
  • Chopped onion 3
  • Black peppercorn 6
  • Garlic 8 cloves
  • Big cardamom 3-4
  • Whole red chilies  8-10
  • Turmeric 1 tsp
  • Fennel seeds 1 tsp
  • Coriander seeds 1 tbsp
  • Chopped ginger 2 tbsp
  • Salt  to taste

Method:

  1. Pour oil add chopped onions make them golden brown.
  2. Now add chicken pieces and salt.
  3. When chicken water dries then add yogurt, chopped ginger, fennel, whole coriander, whole red chilies, big cardamom and whole black pepper roast it well.
  4. Then pour water simmer it on low temperature.
  5. When oil starts to comes up, so khara masala chicken is ready.
