Vietnam Sweet N Sour Mutton, Ma Po Beef Mince And Goi Chay by Chef Gulzar

Ingredients For Vietnam Sweet N Sour Mutton:

  • Mutton 1/2 kg
  • Garlic paste 1 tbsp
  • Egg 1
  • White flour 2-3 tbsp
  • Brown sugar 1 tsp
  • White pepper 1/3 tsp
  • Oil  for fry
  • Salt to taste

For Sauce:

  • Chopped garlic 4-5 cloves
  • Vinegar 1/2 cup
  • Brown sugar 1 tbsp
  • Stock 1 cup
  • Green chilies 3 to 4
  • Black pepper 1/2 tsp
  • Corn flour  1 tbsp
  • Oil 2-3 tbsp
  • Salt to taste

For Garnish:

  • Sliced carrot 1
  • Green onion  2 to 3

Method:

  1. Take a mixing bowl add garlic paste, corn flour, flour, brown sugar, salt and chopped white pepper mix it well.
  2. Now marinate the mutton and leave it for a while.
  3. Then pour oil or grill it and keep it on a side.
  4. For making sauce, pour oil add garlic cloves for frying.
  5. Now add vinegar, brown sugar, stock, chopped black pepper, green chilies and salt boil it.
  6. Then add corn flour mix it well.
  7. For making thick sauce, mix it in mutton.
  8. Now add carrot and green chilies with water.
  9. Take it out in a dish add green onion and carrot for garnish then serve.

Ingredients For Ma Po Beef Mince:

  • Beef mince 1/2 kg
  • Chopped garlic 5-6 cloves
  • Chopped onion 1
  • Black pepper 1 tsp
  • White pepper 1/2 tsp
  • Dark soya sauce 2 tbsp
  • Hot sauce 2 tbsp
  • Stock as required
  • Corn flour 1 tbsp
  • Red chili sliced 4 to 5
  • Green coriander 1/2 cup
  • Sesame oil 1 tbsp
  • Oil 2-3 tbsp
  • Salt  to taste

Method:

  1. Take a pan pour oil add garlic and chopped onions fro frying.
  2. Now add mutton mince roast it well.
  3. Then add black pepper, chopped white pepper, salt, hot sauce and dark soya sauce, mix it well.
  4. Now add stock and leave it to cook.
  5. Now add corn flour mix it well.
  6. When it becomes thick, take it out in a dish.
  7. Add red chili slice and green coriander or parsley for garnish then serve.

Ingredients For Goi Chay:

  • Boiled noodles 100 gm
  • Grated cabbage 1/2 cup
  • Grated carrot 1/2 cup
  • Chopped garlic  3-4 cloves
  • Red chili 4 to 5
  • Crushed peanut 1/2 cup
  • Lemon juice 3 tbsp
  • Soya sauce   2 tbsp
  • Mix herbs  1/2 tsp
  • Salt to taste

Method:

  1. First boil the noodles.
  2. Now add grated cabbage and carrot.
  3. Then take a mixing bowl add mixed herbs, chopped garlic, salt mix it well.
  4. Now add vegetables, boiled noodles and sauce mixture mix it and add roasted and chopped peanuts serve it well.
