Doughnut Muffins by Zarnak Sidhwa

Ingredients:

  • Caster sugar 1/2 cup
  • Butter 1/4 cup
  • Ground nutmeg 3/4 tsp
  • Milk 1/2 cup
  • Baking powder 1 tsp
  • Flour 1 cup
  • Melted butter 1/4 cup
  • Caster sugar 1/2 cup
  • Ground cinnamon 1 tsp

Method:

  1. Mix 1/2 cup caster sugar, 1/4 cup butter and nutmeg in bowl.
  2. Stir in milk and then mix in baking powder and flour until just combined.
  3. Fill greased mini muffin cups about half full.
  4. Bake in preheated oven at 190 degrees C or until tops are lightly golden, 15 to 20 minutes.
  5. While muffins are baking, place 1/4 cup of melted butter in bowl.
  6. In separate bowl, mix together 1/2 cup of sugar with cinnamon.
  7. Remove muffins from their cups, dip each muffin in melted butter and roll in sugar-cinnamon mixture.
  8. Let cool and serve.
