Ingredients:

  • Brinjal 4
  • Fresh milk 1 cup
  • Yogurt 3 cups
  • Sugar 1 tsp
  • Corn flour 1 tbsp
  • Red chilies 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Salt to taste

For Bhagar:

  • Oil 1 cup
  • Whole red chilies 6
  • Curry leaves few
  • Dry fenugreek leaves 4-5
  • Cumin 1 tsp

Method:

  1. Mix yogurt, corn flour, sugar and fresh milk nicely and beat it.
  2. Now put brinjal slices in karahi, deep fry in hot oil, when golden brown, take it out and spread it.
  3. Then heat 1/2 cup oil in wide pot, put ginger garlic paste, red chilies and salt, roast it lightly and add in fried brinjal.
  4. Make layer of half yogurt in big and wide dish, make layer of masala brinjal and put yogurt on top.
  5. In end, heat oil, fry all ingredients, make bhagar and put on raita,
