Cheesy Lemon Flan by Shireen Anwer

Ingredients

For Base:

  • Digestive biscuits  2 cups
  • Melted butter 4 ounces

For Filling:

  • Condensed milk 3/4 cup
  • Curd cheese 1/2 cup
  • Lemon juice 2 tbsp
  • Lemon zest 1 tsp
  • Flour 1 tbsp
  • Eggs 3 separated

Method:

  1. Mix crush biscuits with melted butter
  2. Now press in 8 inch pie plate and keep aside.
  3. Preheat oven to 150 degrees C.
  4. For filling: Put condensed milk, curd cheese, lemon juice, lemon zest, flour and egg yolks in bowl and beat until thick.
  5. Now stiff egg whites and fold in mixture.
  6. Now put mixture on biscuit base and bake in preheated oven on 150 degrees C for 35-40 minutes until filling is set.
  7. Then cool it, decorate with fresh cream swirls and serve.
