Crunchy Top Cake by Zarnak Sidhwa

Ingredients:

  • Flour 1-1/2 cups
  • Baking powder 1-1/2 tsp
  • Caster sugar 6 tbsp
  • Salt 1/2 tsp
  • Butter 1/3 cup
  • Milk 1/2 cup
  • Egg 1
  • Vanilla essence 1/2 tsp
  • Butter (melted) 2 tbsp
  • Brown sugar 1/2 cup
  • Flour 2 tbsp
  • Ground cinnamon 1/2 tsp

Method:

  1. Mix together flour, baking powder, sugar and salt.
  2. Cut in butter with pastry blender or two knives till crumbs form.
  3. Beat egg, then stir in milk and vanilla.
  4. Add egg-milk mixture to flour mixture all at once.
  5. Stir carefully until just blended.
  6. Pour batter into greased and floured 9-inches square pan and spread evenly.
  7. Drizzle top with melted butter.
  8. In small bowl mix together brown sugar, 2 tbsp flour and 1/2 tsp cinnamon.
  9. Sprinkle on top of cake.
  10. Bake in preheated oven at 220 degrees C for 15 to 20 minutes, or until a toothpick inserted into center of cake comes out clean.
